'Nibbles' pt. 2
bites from Norway
Sharing some of my favorite bits and bites from my recent trip to Norway below.
my first dinner in Bergen, Norway, which did a disservice to the trope that Ikea is indeed an accurate representation of what Scandinavia is actually like. This bowl of meatballs with gravy, mushy peas, and lingonberries was from Pingvinen, a cozy pub serving traditional Norwegian dishes (mom had fish soup).
a moment in-between heavy downpours at our hotel, Hotel Ullensvang, on Hardangerfjord, which had easy access to swims and cold plunges post sauna.
munching on a cinnamon roll and a pesto roll from Fløy Bakeri in Lofthus after dropping off our bags.
on our hike to Trolltunga the next day (a ~12 mile out and back to a famous rock feature). It was cold, rainy, and windy but Norwegian brown cheese, dates, and chocolate bars got us through.

we stayed in a cabin on the trail that night. We were supposed to sleep in tents at the top of the hike but the storm made this impossible (I was very glad). We warmed ourselves by the fireplace that evening, sipping bowls of warm chicken stew with gnocchi.
the ornate dining room at the Utne Hotel, which serves a five course dinner to guests every night. the menu was extremely local - down to the butter.
a salty Norwegian hotel breakfast - cured meats, liver pâté, cheese, smoked salmon, sliced beets, pickles, omelette, and seeded cracker.

fluffy cinnamon buns nestled on the shelf in Spildegarden, a small cafe we visited for our final lunch. the fish soup was excellent.

An amazing week with you that I will treasure forever! I was also thankful for the cabin to sleep in!
